As I introduced the four chefs - Chloe Coscarelli, Adam Sobel, Daphne Cheng, and Jay Astafa - to you yesterday they were making their introductions to me as well. Yes, I had never heard of them before.
I think I will need to make sure I have some of the less familiar ingredients for the vegan mozzarella cheese. These include kappa carrageenan, lactic acid, lecithin powder and an immersion blender available when the time comes to make this. I just love cheese!! Purple carrots are needed for another recipe. How hard are those going to find? My daughter's made feta cheese with tofu and it was pretty good. Do you think I can impress them with Jay Astafa's recipe? Now to decide on my first choice of chef to emulate!

I rarely cook anymore.
I had been vacillating between learning to draw, learn a bit more French than beginner, or learning to cook vegan. I am new to the vegan lifestyle for about 4-5 months. During this time my older daughters, 16 and 18 years old have been educating me and cooking for me. Seriously, I had mostly eaten out, made sandwiches, ate fruit and vegetables raw, and eaten breakfast foods. Oh, and pasta and spaghetti sauce rounded this out. This has been going on for several years. Yes, this will be a new experience for me. Thankfully, there are some wonderful vegan chefs out there. Before becoming vegan my favourite foods were eggs, cheese, yogurt, milk. Giving these up was going to be tough, or so I thought. With the encouragement of my daughters and their passion for cooking all things vegan I did not lift a finger to prepare my own meals. Well, this is going to change. At least until this challenge is over. I let the girls know and I am certain that they will be my face to face mentors as well as critics (I hope encouraging ones). Besides trying to learn some interesting recipes I will look to include in my package of learning to expand my knowledge of veganism and learn a little bit about some famous vegan chefs.
